Ingredients:
- 1/2 kg beef shank (or similar cut; cut into small pieces)
- 3 tablespoons sweet soy sauce (kecap manis)
- 1 block palm sugar (coarsely crushed)
- 1/2 packet beef seasoning (Royco or similar)
- 2 stalks scallions (sliced)
- 2 small tomatoes (sliced lengthwise)
- 5 green bird’s eye chilies (sliced)
- 8 shallots (sliced)
- Water (as needed)
- Oil (for sautéing)
For the Spice Paste:
- 3 cloves garlic
- 3 candlenuts
- 1 teaspoon salt
- 1 tablespoon black peppercorns

Prepare the Beef: Begin by cleaning the beef thoroughly and cutting it into small, bite-sized pieces. If desired, gently pound the beef to tenderize it.

Sauté Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the sliced shallots and sauté until they become slightly translucent. Next, incorporate the spice paste (garlic, candlenuts, salt, and black peppercorns), stirring frequently until fragrant.

Caramelize Palm Sugar: Add the coarsely crushed palm sugar to the pan. Stir continuously until the sugar starts to melt and blend with the aromatics.

Cook the Beef: Introduce the beef pieces to the pan. Sauté until the beef starts to brown and change color. Pour in enough water to cover the beef. Bring to a boil, then reduce the heat to a simmer and cover. Cook for approximately 45 minutes, or until the beef is tender.

Add Final Ingredients: After the beef is tender, stir in the sweet soy sauce, sliced tomatoes, scallions, green chilies, and beef seasoning. Cook for an additional 5 minutes to allow the flavors to meld together.
