Ingredients:

For the Peanut Sauce:

  • 1 cup roasted peanuts
  • 3 shallots
  • 3 cloves garlic
  • 6 dried red chilies
  • 3 fresh red chilies
  • 1/2 cup palm sugar

Instructions:

  1. Prepare the Ingredients:

    • Tofu: Cut the tofu into cubes. Heat oil in a pan and fry the tofu cubes until golden and crispy on all sides. Set aside.
    • Egg: Fry the egg in the same pan until cooked to your liking (sunny-side up or over-easy). Remove from heat and set aside.
    • Bean Sprouts: Briefly blanch the bean sprouts in boiling water for about 1 minute, then drain and set aside.
    • Cucumber: Slice the cucumber into thin rounds or your preferred shape.
  2. Make the Peanut Sauce:

    • Roasted Peanuts: Place the roasted peanuts in a blender or food processor and blend until smooth.
    • Shallots and Garlic: Peel and chop the shallots and garlic.
    • Dried Red Chilies: Soak the dried red chilies in warm water for about 20 minutes until softened. Drain.
    • Fresh Red Chilies: Remove the stems from the fresh red chilies.
    • Blending: In the blender, combine the roasted peanuts, shallots, garlic, soaked dried chilies, fresh red chilies, and palm sugar. Blend until the mixture is smooth. If the sauce is too thick, you can add a little water to reach your desired consistency.
  3. Assemble the Dish:

    • Plate the Dish: On a serving plate, place the fried egg first. Arrange the fried tofu cubes on top of the egg.
    • Add Toppings: Scatter the blanched bean sprouts and cucumber slices over the tofu.
    • Sauce It Up: Generously drizzle the peanut sauce over the tofu, egg, bean sprouts, and cucumber.
  4. Serve and Enjoy:

    • Ready to Serve: Your TTKK is now ready to be enjoyed. Serve immediately while the tofu is still crispy and the sauce is fresh.
