Telur Gulung ala-ala: Indonesian Style Egg Rolls

This Indonesian-style egg roll, known as Telur Gulung ala-ala, is a delightful dish that combines the simplicity of eggs with a variety of vegetables and seasonings. Perfect for a quick meal or as a savory snack, this recipe is easy to follow and results in deliciously fluffy rolls with a burst of flavor in every bite.

Ingredients:

  • 5 large eggs
  • 200 ml UHT plain milk
  • 2 tablespoons sago flour (tapioca flour)
  • 1 medium onion, finely chopped
  • 1 small carrot, diced
  • 1 tomato, diced
  • 4 canned mushrooms, sliced
  • Broccoli florets, as needed
  • Salt, to taste
  • Black pepper, to taste
  • Mushroom broth powder, to taste

Instructions:

  1. Prepare the Egg Mixture:

    • Dissolve the sago flour in a small amount of milk.
    • In a mixing bowl, combine the dissolved sago flour with the eggs and whisk until well blended.
    • Gradually add the remaining milk to the mixture and continue to whisk until smooth and uniform.
  2. Incorporate Vegetables:

    • Add the chopped onion, diced carrot, broccoli florets, sliced mushrooms, and diced tomato to the egg mixture.
    • Season with salt, black pepper, and mushroom broth powder to taste. Mix everything together until evenly distributed.
  3. Cook the Egg Rolls:

    • Heat a non-stick pan or a Happy Call pan over medium heat.
    • Pour about 2 tablespoons of the egg mixture into the pan, spreading it out into a thin layer. Allow it to cook until it begins to set but is still slightly moist on top.
    • Use a fork to gently roll the partially cooked egg mixture into a log shape, positioning it to one side of the pan.
    • Pour another 2 tablespoons of the egg mixture into the pan, next to the rolled portion. Allow it to cook and set, then roll it around the first log. Continue this process until half of the egg mixture is used up.
  4. Finish Cooking:

    • Repeat the rolling process with the remaining egg mixture, making sure to evenly cook each layer.
    • Once the egg rolls are cooked through and golden brown, remove them from the pan and let them cool slightly.
  5. Serve:

    • Slice the egg rolls into bite-sized pieces and serve warm. They are delicious on their own or with your choice of dipping sauces such as sambal, ketchup, or mayonnaise.
