Daging Sapi Kuah Kuning (Indonesian Beef in Yellow Coconut Soup)
Ingredients:
- 500 grams (1/2 kg) beef, cut into small cubes
- 1/2 coconut, grated (about 1 liter of coconut milk)
- 4 bay leaves
- 2 stalks of lemongrass, bruised
- 1 medium-sized galangal (laos), sliced
- 1 medium-sized ginger, sliced
- For the Spice Paste:
- 7 large shallots
- 4 cloves garlic
- 1 candlenut
- 1 large piece of turmeric (about 2 inches), peeled
- 1 teaspoon ground coriander
- 1 sachet mushroom broth powder
- 1/2 small block of palm sugar
- 1 tamarind pod
- Salt and sugar to taste

Prepare the Beef:
- Thoroughly wash the beef cubes under cold water and drain well.

Blend the Spice Paste:
- In a blender, combine shallots, garlic, candlenut, turmeric, and ground coriander. Blend until smooth.

- Place the beef cubes into a pressure cooker. Add the spice paste, bay leaves, lemongrass, sliced galangal, and ginger.
- Pour in the coconut milk, and add the mushroom broth powder, palm sugar, and tamarind pod. Stir well to combine all ingredients.

- Securely close the pressure cooker lid and cook for approximately 20-30 minutes, starting the timer once the water has reached a boil.

- After the cooking time is complete, transfer the mixture to a large skillet or pan. Taste and adjust seasoning with salt and sugar as needed.

- Simmer over medium heat until the beef is tender and the flavors are well blended.
