Indonesian Yellow Spiced Chicken (Ayam Ungkep Bumbu Kuning)

Ingredients:

  • 1.5 to 2 whole free-range chickens, cut into 10 pieces (including thighs and drumsticks)

For the Spice Paste:

  • 10 shallots
  • 6 cloves garlic
  • 5 candlenuts
  • 1 tablespoon red chili powder
  • 1 thumb-sized piece of turmeric
  • 1 tablespoon ground coriander
  • 1 teaspoon finely ground white pepper

For the Aromatics:

  • 2 to 3 thumb-sized pieces of galangal
  • 1 thumb-sized piece of ginger
  • 3 to 4 stalks lemongrass, bruised
  • 6 bay leaves
  • 3 kaffir lime leaves

Seasonings:

  • Salt, sugar, and mushroom seasoning (1 to 2 teaspoons each, adjust to taste)

Instructions:

  1. Prepare the Chicken:

    • Thoroughly clean the chicken pieces and blanch them in boiling water for 2 to 3 minutes. Discard the blanching water to remove impurities.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, candlenuts, red chili powder, turmeric, ground coriander, and white pepper into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a large pan over medium heat. Sauté the spice paste until it changes color and becomes aromatic.
  4. Add Aromatics:

    • Add the galangal, ginger, lemongrass, bay leaves, and kaffir lime leaves to the pan. Continue to sauté until the mixture is fragrant and the spices are well incorporated.
  5. Simmer the Chicken:

    • Add the chicken pieces to the pan, stirring to coat them with the spice mixture. Pour in enough water to cover the chicken. Season with salt, sugar, and mushroom seasoning to taste.
  6. Cook the Dish:

    • Reduce the heat to low and let the chicken simmer for 30 to 40 minutes, or until the liquid has mostly evaporated and the chicken starts to release its oil. The chicken should be tender and infused with the rich flavors of the spices.
  7. Serve:

    • The dish is ready to be enjoyed as is, or you can let it cool and store it for future use. It can also be fried for a crispy texture before serving.
