Ukrainian Kyivsky Torte Recipe

Description:

Indulge in the decadent flavors of Ukraine with this rich and luxurious Kyivsky Torte. Unlike traditional cakes, tortes are known for their denser texture, achieved through the use of ground nuts or bread crumbs instead of flour, and the addition of eggs for lightness. This particular torte features layers of sponge cake infused with the nutty goodness of ground hazelnuts or walnuts, all held together with a luscious buttercream filling. Ingredients:

  • 3/4 cup ground walnuts
  • 12 hazelnuts
  • 3/4 cup eggs (12 eggs)
  • 3 cups granulated sugar
  • 1 1/2 cups extra strong coffee
  • 1 cup flour
  • 5 cups unsalted butter
  • 2 1/2 cups sugar

Instructions:

  1. Prepare the Cake Layers:

    • Beat the 12 egg yolks until light and gradually beat in the granulated sugar, one tablespoon at a time, until the mixture becomes lemon-colored, light, and fluffy.
    • Fold in the bread crumbs and ground nuts until well combined.
    • In a separate bowl, beat the 12 egg whites until stiff peaks form.
    • Gently lighten the nut mixture with a small portion of the beaten egg whites, then fold in the remaining whites until fully incorporated.
  2. Bake the Cake:

    • Butter two 9 or 10-inch deep layer pans and sprinkle with fine bread crumbs to prevent sticking. Alternatively, use parchment paper for the bottom of the pans.
    • Divide the batter evenly between the pans and bake in a preheated 325°F oven for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool for 10 minutes before loosening the edges with a knife and gently inverting them onto a wire rack to cool completely.
  3. Prepare the Buttercream Filling and Icing:

    • In a double boiler over simmering water, combine 1 cup of hot strong coffee with the chocolate, stirring until melted and smooth.
    • In a separate bowl, beat the 5 egg yolks until light and set aside.
    • Blend 2 1/2 tablespoons of flour into the remaining 1/2 cup of cold coffee until smooth and lump-free.
    • Add the flour mixture to the whipped egg yolks and mix well.
    • Gradually add this mixture to the melted chocolate, whisking quickly, and cook until thickened, stirring frequently for about 10 minutes.
    • Once thickened, remove from heat and allow to cool.
    • In another bowl, beat the unsalted butter with sugar until light and fluffy. Gradually add the cooled chocolate pudding mixture, beating until fluffy and well combined.
  4. Assemble the Torte:

    • Once the cake layers have cooled completely, spread a generous layer of the buttercream filling between each layer of cake.
    • If desired, cut each cake layer in half horizontally to create four layers and add additional filling between each layer.
    • Use the remaining buttercream to frost the top and sides of the torte, creating a smooth and luxurious finish.
  5. Serve and Enjoy:
