Grandma Rose’s Italian Genettis 1946 🇮🇹

Cook Time: 10 minutes
Prep Time: 10 minutes
Total Time: 20 minutes
Servings: 48 cookies

Description:

Soft Italian cake-type cookies, treasured in the family since 1946, these Genettis are a delightful treat that has stood the test of time. 🕰️ Passed down through generations, they’re a taste of tradition and a celebration of family history.

Ingredients:

  • 1/2 tsp salt
  • 3 eggs
  • 1/2 cup canola oil
  • 1/2 cup white sugar
  • 1/2 tsp baking powder
  • 5 cups all-purpose flour
  • 3 tbsp milk
  • 3 tsp anise flavor

Instructions:

  1. Prepare Ingredients: Gather your ingredients and preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper.

  2. Beat Eggs: In a large mixing bowl, beat the eggs together with the canola oil and white sugar for approximately five minutes, until the mixture is light and fluffy.

  3. Add Flavor: Combine the milk and anise flavor in a separate bowl, ensuring they’re thoroughly mixed.

  4. Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, salt, and baking powder.

  5. Mix Wet and Dry: Gradually add the dry ingredients into the wet ingredients, stirring until a soft, very soft dough forms. It should be soft but not sticky. Be cautious not to add too much flour, as this can result in dry cookies.

  6. Shape the Dough: Roll pieces of the dough into finger-lengths and widths, then shape them into figure 8s on the prepared parchment-lined cookie sheet. Allow some space between each cookie to spread while baking.

  7. Bake: Place the cookie sheet in the preheated oven and bake for 8 to 10 minutes, or until the bottoms are just slightly golden. The tops should remain mostly pale with no coloration.

  8. Prepare Glaze: While the cookies are cooling, prepare a glaze by mixing icing powder and anise flavor with a drop of milk. Adjust the consistency by adding more milk or icing sugar until you achieve the desired thickness.

  9. Frost: Once the cookies have cooled slightly, frost them generously with the prepared glaze. Allow the glaze to set before serving.

Serving Suggestions:

These delightful Italian Genettis are best enjoyed with a cup of coffee or tea, perfect for an afternoon treat or as a sweet ending to any meal. Share them with loved ones and celebrate the rich flavors and traditions of Italian baking passed down through generations. Buon appetito! 🇮🇹🍪
