Mota Dana Jaipur Sweet (Rajasthani Urad Dal Vada in Sugar Syrup)

For the Vada:
- 1/2 cup white urad dal (split black gram)
- 1 tsp cardamom powder
- A pinch of baking powder
- Ghee, for frying

- 1/2 cup sugar
- 1/2 cup water
- 1 tsp cardamom powder
- 1 tsp rose water

- 1 cup sugar
- 1 tsp cardamom powder
- 1/2 cup water
- 1 tsp rose water
- A pinch of saffron

Instructions:

Soak the Urad Dal:
Soak the white urad dal in water for at least 4–5 hours, or overnight. -
Grind the Dal:
After soaking, grind the urad dal into a smooth batter using a mixer. Add water gradually as needed to form a smooth paste. -
Test the Mixture:
To check if the batter is ready, take a small drop of the mixture and drop it into a bowl of water. If the drop floats, the batter is ready for frying. -
Add Flavors:
Stir in 1 tsp of cardamom powder and a pinch of baking powder to the mixture and whisk well. -
Prepare the Thin Syrup:
In a saucepan, boil 1/2 cup sugar with 1/2 cup water to make a one-string syrup. Add cardamom powder and rose water, then set aside. -
Prepare the Thick Syrup:
In another saucepan, boil 1 cup sugar with 1/2 cup water to make a three-string syrup. Once the syrup reaches the right consistency, add cardamom powder, saffron, and rose water, and mix well. -
Fry the Vadas:
Heat ghee in a pan over medium heat. Shape the urad dal mixture into small vadas (balls) and fry them in the hot ghee until golden brown and crisp. -
Soak in Thin Syrup:
After frying, immediately place the vadas in the thin syrup and let them soak for about 20 minutes. -
Soak in Thick Syrup:
Once the vadas have soaked in the thin syrup, transfer them to the thick syrup. Stir gently to coat each vada with syrup, then remove them onto a plate. -
Serve:
Allow the vadas to rest for a few hours. The outer layer will harden, while the inside remains soft. Serve and enjoy this delightful Rajasthani sweet treat!
