Chicken Teriyaki Rice Bowl Recipe

Ingredients:

  • 1 kg chicken fillets, cut into bite-sized pieces
  • Black pepper, to taste
  • Salt, to taste
  • Chicken seasoning powder, to taste
  • Cornstarch
  • All-purpose flour
  • Light soy sauce
  • Dark soy sauce
  • Mirin or sake (optional)
  • Sugar
  • Honey (optional)
  • 1 onion, thinly sliced
  • Ginger, sliced
  • Garlic, minced
  • Large red chili pepper, sliced
  • Baby corn, halved
  • Broccoli florets
  • Baby carrots, halved
  • Sesame oil
  • Togarashi or chili powder
  • Toasted sesame seeds
  • Cooked white rice
  • Fish sauce
  • Eggs

Instructions:

  1. Marinate the Chicken:

    • In a bowl, season the chicken pieces with black pepper, salt, chicken seasoning powder, and a touch of sugar. Add 2 beaten eggs and mix well to coat. Sprinkle cornstarch over the chicken and mix until evenly coated. Set aside.
  2. Fry the Chicken:

    • Heat oil in a frying pan. Dredge the marinated chicken pieces lightly in all-purpose flour. Fry them in batches over medium heat until golden brown and cooked through. Remove and set aside.
  3. Prepare the Teriyaki Sauce:

    • In the same pan, add light soy sauce as the base of the teriyaki sauce. Mix in a bit of dark soy sauce for color. Add sliced onion and ginger.   4. Cook the Mixed Vegetables:

    • Chop all the vegetables. In a separate pan, heat a little sesame oil. Add minced garlic and sauté until fragrant. Add all the chopped vegetables including the chili pepper. Stir-fry briefly, then add a small amount of water to help steam the vegetables until tender. Season with fish sauce and thicken with a slurry of cornstarch mixed with water. Stir constantly until the sauce thickens. Finish with a drizzle of sesame oil.
  5. Combine Chicken with Teriyaki Sauce:

    • Once the chicken is cooked and crispy, add it to the prepared teriyaki sauce. Let it simmer for about 2 minutes to absorb the flavors. Remove the chicken from the sauce and set aside.
  6. Assemble the Chicken Teriyaki Rice Bowl:

    • In serving bowls, place a generous serving of cooked white rice. Arrange the cooked mixed vegetables and teriyaki chicken over the rice. Garnish with toasted sesame seeds and a sprinkle of togarashi or chili powder for added spice.
