Instructions

    Heat mustard oil in a pan over medium heat until it starts to smoke slightly. Reduce the heat.

  3. Sauté the Spices:
    Add cumin seeds, a pinch of asafoetida, black cardamom, and dried Kashmiri chilies. Stir for a few seconds. Then, add the garlic and sauté until golden brown and fragrant.

  4. Cook the Spinach:
    Add the chopped spinach to the pan and sprinkle salt to taste. Stir well and cover the pan with a lid. Cook for about 5–7 minutes until the spinach wilts and becomes soft.

  5. Add Fennel Powder:
    Once the spinach is cooked, sprinkle fennel powder over it and mix thoroughly.

  6. Finishing Touches (Optional):
    For an extra burst of flavor, you can add ½ tsp black pepper powder, 1 tsp cumin powder, 1 tsp lemon juice, and a pinch of sugar. Stir and cook for another minute.
