Kerala-style Stir-Fried Carrots and Beans with Coconut

Description:
Thoran is a traditional Kerala side dish, typically served alongside a main meal. It involves finely chopped vegetables cooked with coconut and spices. Carrot and Beans Thoran is a flavorful combination of tender carrots and beans, seasoned with a variety of spices, and finished off with a tempering of mustard seeds and curry leaves. It’s a popular dish during festivals as well.

Ingredients:

  • 3 carrots, chopped
  • 20 green beans, chopped
  • 1 onion, chopped
  • 3 green chilies, sliced
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 10 curry leaves
  • 1/4 cup grated coconut

Preparation Time: 15 minutes
Cook Time: 35 minutes

Instructions:

  1. Wash and chop the carrots and beans into small pieces.
  2. In a mixing bowl, combine the chopped vegetables with onion, green chilies, cumin powder, turmeric powder, and salt. Mix everything well.
  3. Heat oil in a pan. Add the mustard seeds and curry leaves. Sauté for about 10 seconds until they crackle.
  4. Add the vegetable mixture to the pan, stir well, and cover with a lid. Let it cook on medium heat for 20 minutes, or until the vegetables are soft and tender.
  5. Once the vegetables are cooked, add the grated coconut and mix everything together. Cook for an additional 3 minutes.
  6. Remove from heat and serve hot, paired with mixed vegetable sambar and rice for a wholesome meal.
