Kerala Style Egg Cashew Curry Recipe

Ingredients:

  • 2 boiled eggs, peeled and halved
  • 7 cashews
  • 1 onion, chopped
  • 1 tomato, chopped
  • 2 potatoes, peeled and chopped
  • 1-inch ginger
  • 3 garlic cloves
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • ¼ teaspoon garam masala powder
  • 1 tablespoon fennel seeds
  • 2 tablespoons chopped fresh coriander
  • 2 sprigs curry leaves
  • Oil, as required
  • Salt, to taste

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Instructions:

  1. Begin by soaking the cashews in warm water for 15-20 minutes.
  2. In a saucepan, heat water, add the eggs, and cook for 15 minutes. Once done, peel and cut the eggs in half. Set them aside.
  3. In a blender, make a smooth paste by grinding the soaked cashews with a little water. Keep this paste aside.
  4. In another blender, combine the onion, tomato, ginger, garlic, green chili, turmeric powder, coriander powder, garam masala powder, and fennel seeds. Add a little water and grind into a smooth paste. Set aside.
  5. Heat oil in a pan and add mustard seeds. Once they begin to crackle, add curry leaves and sauté for 10 seconds.
  6. Add the onion-tomato paste and cook for 4-5 minutes.
  7. Add 1 cup of water, potatoes, and salt. Bring to a boil, cover the pan, and cook until the potatoes soften.
  8. Once the potatoes are cooked, add the cashew paste and stir well. Let it cook for another 3-4 minutes.
  9. Turn off the heat and gently add the halved boiled eggs. Garnish with chopped fresh coriander.
  10. Serve Kerala Style Egg Cashew Curry hot with laccha paratha or boondi raita for a satisfying dinner.
