Ingredients:
- 2 boiled eggs, peeled and halved
- 7 cashews
- 1 onion, chopped
- 1 tomato, chopped
- 2 potatoes, peeled and chopped
- 1-inch ginger
- 3 garlic cloves
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- ¼ teaspoon garam masala powder
- 1 tablespoon fennel seeds
- 2 tablespoons chopped fresh coriander
- 2 sprigs curry leaves
- Oil, as required
- Salt, to taste

Instructions:
- Begin by soaking the cashews in warm water for 15-20 minutes.
- In a saucepan, heat water, add the eggs, and cook for 15 minutes. Once done, peel and cut the eggs in half. Set them aside.
- In a blender, make a smooth paste by grinding the soaked cashews with a little water. Keep this paste aside.
- In another blender, combine the onion, tomato, ginger, garlic, green chili, turmeric powder, coriander powder, garam masala powder, and fennel seeds. Add a little water and grind into a smooth paste. Set aside.
- Heat oil in a pan and add mustard seeds. Once they begin to crackle, add curry leaves and sauté for 10 seconds.
- Add the onion-tomato paste and cook for 4-5 minutes.
- Add 1 cup of water, potatoes, and salt. Bring to a boil, cover the pan, and cook until the potatoes soften.
- Once the potatoes are cooked, add the cashew paste and stir well. Let it cook for another 3-4 minutes.
- Turn off the heat and gently add the halved boiled eggs. Garnish with chopped fresh coriander.
- Serve Kerala Style Egg Cashew Curry hot with laccha paratha or boondi raita for a satisfying dinner.
