Ingredients

Curly red chilies 15-20 (adjust to taste)
Large red chilies 5
Ripe red tomato 1
Kaffir lime leaves 2 leaves
Water 250 ml (approx.)
Diabetasol (or sugar for non-keto) 1 sachet
Salt 1 tsp

Instructions

  1. Boil the Eggs: Begin by boiling the chicken eggs until fully cooked. Once cooked, peel the eggs and set them aside.

  2. Fry the Eggs: Heat oil in a frying pan. Once the oil is hot, fry the boiled eggs until they turn golden brown, then drain and set aside.

  3. Prepare the Sambal: In a blender or food processor, combine the red shallots, garlic, curly red chilies, large red chilies, and the ripe tomato. Pulse to create a coarse paste.

  4. Cook the Sambal: In a wok, heat a little oil and sauté the blended spices along with the kaffir lime leaves. Add the diabetasol and salt, stirring until the spices are cooked through.

  5. Combine and Serve: Gradually add water to the sambal mixture until it reaches your desired consistency. Gently add the fried eggs to the sambal, stirring until they are well coated. Serve hot and enjoy your flavorful Telor Balado!
