Savory Tofu Meatballs Soup (For Kids)

Ingredients:

  • 2 pieces of firm tofu
  • 2 beef sausages (finely chopped)
  • 1/4 carrot (grated using a cheese grater)
  • 2 tablespoons all-purpose flour
  • 1 egg
  • A pinch of salt (optional)

For the broth:

  • Water
  • Bouillon powder
  • Celery leaves
  • Green onions
  • 1 clove garlic (finely chopped)
  • Salt to taste
  • (Optional: black pepper to taste)

Instructions:

  1. Prepare the Tofu Meatballs:

    • Begin by mashing the tofu until it’s smooth. Incorporate the all-purpose flour into the tofu, mixing thoroughly until well combined.
    • Add the finely chopped beef sausages and grated carrot into the tofu mixture. If desired, season with a pinch of salt. Crack in the egg and stir everything together until the mixture is uniform.
    • Shape the mixture into small, round balls.
  2. Cook the Tofu Meatballs:

    • Bring a pot of water to a boil. Gently drop the tofu meatballs into the boiling water. Cook them until they float to the surface, indicating they are done. Remove the meatballs with a slotted spoon and set them aside to drain.
  3. Prepare the Broth:

    • In a separate pot, bring water to a boil. Add the chopped garlic and bouillon powder, cooking until the mixture reaches a rolling boil.
    • Season the broth with salt, then add celery leaves and green onions. Adjust the seasoning to taste. If you prefer, you can add black pepper at this stage.
  4. Combine and Serve:

    • Gently add the cooked tofu meatballs to the broth. Turn off the heat and let the flavors meld together for a few minutes.
    • Taste and adjust the seasoning if necessary.
