Instructions

  1. Prepare the Dough for the Fried Bread (Puri):

    • In a large mixing bowl, combine the all-purpose flour (maida) with a pinch of salt.
    • Add the melted ghee and mix it well into the flour, ensuring that the ghee is evenly distributed throughout the mixture.
    • Gradually add milk (or water) little by little to form a smooth, firm dough. Be careful not to add too much liquid at once. The dough should be soft yet not too sticky.
    • Cover the dough with a damp cloth and set it aside for 10-15 minutes to rest.
  2. Prepare the Stuffing:

    • In a dry pan, lightly roast the sesame seeds (til) until they turn golden brown and begin to release a fragrant aroma. Set aside to cool.
    • In the same pan, dry roast the grated dessicated coconut (or copra) on low heat for a few minutes until it turns slightly golden and aromatic. Be sure to stir continuously to avoid burning.
    • Once the coconut has cooled, combine it with roasted sesame seeds, cardamom powder, and caster sugar. Adjust the sugar quantity according to your sweetness preference. Mix well to form a uniform stuffing.
  3. Roll Out the Dough:

    • After the dough has rested, divide it into small, equal-sized balls.
    • Roll each ball into a smooth, thin disc using a rolling pin. The discs should be thin but not too fragile, about 4-5 inches in diameter.
  4. Stuff the Discs:

    • Place a small spoonful of the coconut mixture in the center of each rolled-out disc.
    • Carefully fold the edges over the filling to create a sealed, semi-circle or crescent shape. Press the edges gently with your fingers to seal the edges completely.
  5. Fry the Chavde:

    • Heat oil in a deep frying pan or kadai on medium heat.
    • Once the oil is hot (but not smoking), gently slide the stuffed Chavde into the oil.
    • Fry them in batches, turning them occasionally, until they are golden brown and crispy on all sides. Be careful not to overcrowd the pan to ensure even frying.
    • Use a slotted spoon to remove the Chavde from the oil and place them on a plate lined with paper towels to drain excess oil.
  6. Serve and Enjoy:

    • Allow the Chavde to cool slightly before serving.
