Instructions

  1. Prepare the Almonds: Start by placing the unpeeled whole almonds into a food processor with blades. Add the granulated sugar and pulse until the almonds are finely ground.

  2. Grate the Lemons: Grate the zest from 3 untreated lemons and add it to the ground almonds and sugar mixture.

  3. Combine the Ingredients: Transfer the almond mixture into a bowl, then add the egg whites and almond extract. Mix everything together using a spatula until you have a smooth, well-combined dough.

  4. Shape the Cookies: Once the dough is smooth, take small portions (about 20g each) and form them into round balls.

  5. Dust with Powdered Sugar: Roll each ball in powdered sugar, making sure they are generously coated. Use a fine sieve or sifter to distribute the powdered sugar evenly over the cookies.

  6. Bake the Amaretti: Preheat your oven to 160°C (320°F) in static mode. Place the cookies on a baking tray lined with parchment paper and bake for approximately 40 minutes, or until golden.
