5-6 Sichuan peppercorns (freshly crushed)
1/2 teaspoon Red Chilli flakes (optional)
2 teaspoons Cheddar cheese (grated)

Instructions

Prepare the Dough:

  1. In a large mixing bowl, combine the all-purpose flour, salt, and whisked egg.
  2. Gradually add water, a little at a time, kneading the mixture with your hands until you achieve a soft dough. Continue kneading for about 5-7 minutes.
  3. Once the dough is smooth, cover it with a damp cloth or plastic wrap and refrigerate it for at least 2 hours to allow it to rest and firm up.

Prepare the Filling:

  1. Crumble the homemade paneer (cottage cheese) into a bowl.
  2. Finely chop the red amaranth leaves (or spinach if using) and add them to the crumbled paneer.
  3. Season with salt, black pepper, and nutmeg powder. Mix well until all ingredients are combined. Set aside.

Prepare the Sauce:

  1. In a wide pan, melt butter over low heat.
  2. Add the finely chopped garlic and onion. Sauté them gently until they turn a light golden brown.

  6. Add the lemon zest and salt, and set the sauce aside.

Prepare the Gremolata:

  1. In a small bowl, combine the chopped parsley, mint leaves, grated lemon zest, and grated garlic.
