Ingredients:
- 1 cup frozen corn kernels
- 1/4 cup fresh corn kernels
- 1/2 onion, chopped
- 1 lemon
- Fresh cilantro leaves, chopped (for garnish)
- Salt and pepper to taste
Instructions:
Step | Description |
---|---|
1. | If using frozen corn kernels, cook them in a medium bowl in the microwave for 3 minutes on medium power (650 watts). |
2. | If using fresh corn kernels, cook them for about 1 to 1 1/2 minutes. |
3. | Set aside to cool. |
4. | Season the chopped onions with the salt and pepper. |
5. | Add the seasoned onions to the bowl of corn and mix well. |
6. | Squeeze the lemon juice over the corn-onion mixture and toss to coat evenly. |
7. | Garnish with chopped cilantro. |
8. | Serve immediately, or refrigerate for 1-2 hours and serve cold for enhanced flavor. |
