Festive Shrimp Wreath Recipe

Ingredients:
- 1/3 cup lime juice
- 1/3 cup honey
- 3 tablespoons lime zest
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 1/2 teaspoons pepper
- 1/2 teaspoon garlic powder
- 1 pound large shrimp, peeled and deveined
- 1/2 cup canola oil
- 1/2 cup salsa
- 3 tablespoons chopped fresh cilantro
- 1/4 cup lime juice
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
Instructions:

In a resealable plastic bag, combine lime juice, honey, lime zest, salt, chili powder, pepper, and garlic powder.

Add the shrimp to the bag of marinade. Toss to coat well. Allow the shrimp to marinate for 30 minutes to 1 hour, turning occasionally.

After marinating, remove the shrimp from the marinade and drain well. Discard the marinade unless you plan to use it for cooking the shrimp.

In a skillet, heat the canola oil over medium-high heat. Add the shrimp and cook, turning once, until opaque and cooked through, about 2-3 minutes per side.

If preparing ahead, the shrimp can be chilled for up to one day.

For the salsa and garnish, in a small bowl combine salsa, chopped cilantro, lime juice, and lime zest. Optionally, add a splash of tequila for extra flavor. This can be prepared up to 1 day in advance.

To serve, place the bowl of salsa in the center of a platter. Arrange the cooked shrimp and sliced bell peppers in a wreath pattern around the salsa.
