Description:

Indulge in this rich and satisfying Lower Carb French Onion Soup, a delightful twist on the classic that doubles as a hearty meal. By blending beef and chicken broths and incorporating grated Parmesan or Romano cheese directly into the broth, this recipe offers a depth of flavor that’s uniquely satisfying. It’s topped with a savory combination of Provolone and Swiss cheeses, giving it a perfect golden, bubbly finish. For a more traditional approach, consider adding a thick slice of toasted bread beneath the cheese layer.

Ingredients:

  • 2-3 sweet onions
  • 2 tablespoons olive oil
  • 2 tablespoons canola oil
  • 2 cans (about 4 cups) chicken broth
  • 2 cans (about 4 cups) beef broth
  • 4 tablespoons Romano cheese, grated
  • 8 slices Asiago cheese
  • 8 slices Provolone cheese
  • 2 slices Swiss cheese
  • 1/4 cup dry sherry (optional)

Instructions:

  1. Prepare the Onions: Begin by cutting the sweet onions in half, then thinly slice them to create delicate, half-moon shapes.

  2. Sauté the Onions: In a large sauce pot, heat the olive oil and canola oil over medium-high heat. Add the sliced onions to the pot. Sauté the onions, stirring occasionally, for about 20 minutes until they become limp and achieve a beautiful golden-brown color.

  3. Combine Broths: Once the onions are caramelized, add both the chicken and beef broths to the pot. Bring the mixture to a boil, which should take about 5-8 minutes.

  4. Add Sherry (Optional): For an extra layer of depth, add a splash of dry sherry to the broth. Stir to combine, then turn off the heat.

  5. Prepare for Broiling: Set your oven to the broil cycle. Place 4 oven-safe soup crocks into a baking pan. This will help prevent any spillover and make it easier to handle the hot crocks.

  6. Assemble the Soup: Ladle the onion and broth mixture evenly into each crock. Fill the crocks almost to the top.

  7. Add Cheese: Sprinkle 1 tablespoon of grated Romano cheese into the broth of each crock, stirring gently to incorporate. Top each crock with two slices of Provolone and two slices of Swiss cheese.

  8. Broil: Carefully transfer the baking pan with the crocks to the broiler. Broil the soups until the cheese is golden brown and bubbly, which should take about 5-10 minutes. Keep a close eye to avoid burning.

  9. Serve: Once the cheese is beautifully melted and browned, carefully remove the crocks from the oven and place them on separate plates to serve.

Note: For those who don’t mind a bit more carbs, you can add a thick slice of toasted bread to each crock before adding the cheese. Just be sure to adjust the amount of broth mixture accordingly.
