Instructions

  1. In a small saucepan, prepare a roux by melting the butter over low heat and stirring in the flour until it reaches a pale golden color. Set aside for later use.

  2. In a medium saucepan, heat the grapeseed oil (or any oil of your choice) over medium heat. Sauté the diced carrots, onions, celery, scallions, and minced garlic until they become tender and fragrant, about 5-7 minutes.

  3. Add the canned tomatoes, hot sauce, and tomato paste to the vegetable mixture. Allow it to simmer for 20 minutes, stirring occasionally, until all vegetables are soft and well-blended.

  4. While the vegetables are cooking, mix the water with the crab base in a separate bowl.

  5. Once the vegetables are tender, incorporate the water and crab base mixture into the saucepan. Bring the mixture to a gentle boil, then add the imitation crab meat.

  6. Allow the soup to come to a second boil, then remove it from the heat.

  7. For a silky texture, purée the mixture in batches using a blender until smooth. If you prefer a chunkier texture, a food processor can be used, but the bisque will be less smooth.

  8. Return the puréed soup to the saucepan and reheat gently over low heat.

  9. Stir in the cream and dry sherry, cooking just until the alcohol in the sherry has evaporated, about 5 minutes.

  10. Serve the bisque hot, garnished with freshly chopped parsley for an elegant touch.

Enjoy Your Bisque

This elegant crab bisque makes for a perfect starter for any special occasion, providing a rich and creamy flavor that will impress your guests while remaining easy to prepare.
