Telur Gulung Ikan Kembung (Mackerel Egg Rolls)
Ingredients:
- 1 whole mackerel
- 2 bay leaves (for boiling the fish)
- 2 eggs
- 1/2 teaspoon gluten-free flour
- 2 ladles of soft rice
- 1 carrot (grated)
- 1/2 ear of sweet corn (grated)
- 1 small tofu (mashed)
- 1 clove garlic (minced)
- 1 shallot (minced)
- Onion powder
- Nutmeg powder
- Sea salt
- Aluminum foil
- Extra virgin coconut oil (EVCO)
Instructions:

Prepare the Fish:
- Clean the mackerel thoroughly.
- Boil the fish with bay leaves to remove any fishy smell. Once cooked, shred the fish meat and set aside.

Prepare the Egg Omelette:
- Beat the eggs with gluten-free flour and a pinch of salt.
- Pour the egg mixture into a heated pan to make an omelette. Set aside.

Prepare the Filling:
- In a pan, sauté the minced garlic and shallot until fragrant.
- Add the shredded mackerel, grated carrot, grated sweet corn, and mashed tofu. Stir well.
- Add a little water, sea salt, nutmeg powder, and onion powder.

- Place the egg omelette on the foil.

- Twist the ends of the foil to seal the roll.
