Ingredients:
- 4-5 garlic cloves
- 1/2 cup olive oil
- 1 can chopped tomatoes
- 1 teaspoon dried oregano
- 2 boiling potatoes
- 2 cups green beans
- 1 zucchini
Instructions:
Step | Description |

1 | Heat a skillet over medium heat. |
2 | Add olive oil to the skillet, ensuring it coats the pan evenly. |
3 | Add garlic cloves to the skillet and cook until soft, taking care not to brown them. |
4 | Drain the liquid from the canned tomatoes, reserving it for later use. |
5 | Add the chopped tomatoes and dried oregano to the skillet, and cook for 20-30 minutes over moderate heat, stirring occasionally to prevent sticking. |
6 | While the tomatoes are cooking, parboil the potatoes and green beans separately. If preferred, you can also microwave the potatoes for quicker results. Aim for them to be al dente. |
7 | Once cooked, drain the green beans and add them to the tomato mixture in the skillet. |
8 | Cut the boiled potatoes into 1-inch cubes and add them to the sauce as well. |
9 | Continue to cook for another 5-10 minutes. If the mixture seems dry or if you prefer a saucier dish, you can add some of the reserved liquid from the tomatoes at this stage. |
10 | Season with salt and pepper to taste. |
