Ingredients:

  • 4-5 garlic cloves
  • 1/2 cup olive oil
  • 1 can chopped tomatoes
  • 1 teaspoon dried oregano
  • 2 boiling potatoes
  • 2 cups green beans
  • 1 zucchini

Instructions:

Step Description
1 Heat a skillet over medium heat.
2 Add olive oil to the skillet, ensuring it coats the pan evenly.
3 Add garlic cloves to the skillet and cook until soft, taking care not to brown them.
4 Drain the liquid from the canned tomatoes, reserving it for later use.
5 Add the chopped tomatoes and dried oregano to the skillet, and cook for 20-30 minutes over moderate heat, stirring occasionally to prevent sticking.
6 While the tomatoes are cooking, parboil the potatoes and green beans separately. If preferred, you can also microwave the potatoes for quicker results. Aim for them to be al dente.
7 Once cooked, drain the green beans and add them to the tomato mixture in the skillet.
8 Cut the boiled potatoes into 1-inch cubes and add them to the sauce as well.
9 Continue to cook for another 5-10 minutes. If the mixture seems dry or if you prefer a saucier dish, you can add some of the reserved liquid from the tomatoes at this stage.
10 Season with salt and pepper to taste.
