Danyachi Amti (Maharashtrian Style Groundnut Curry)

Danyachi Amti is a simple and flavorful groundnut curry, commonly prepared during fasting days. Groundnuts are blended into a paste and then tempered with ghee and traditional Maharashtrian spices. The addition of buttermilk or kokum imparts a unique and delicious flavor to the dish.

Ingredients:
- 1 cup groundnuts (peanuts), roasted
- 2 1/2 cups water
- 2 tsp sugar
- 1/4 cup buttermilk or 4 kokum pieces
- 2 tsp cumin seeds
- Ghee, as required
- 3-4 green chilies, finely chopped
- Salt, to taste
- Black salt for fasting
- Fresh coriander leaves, chopped

Instructions:
- To prepare Danyachi Amti, first blend the roasted groundnuts into a smooth paste, using a little water to ease the process.
- In a saucepan, add the groundnut paste, water, salt, kokum (if using), and sugar. Mix well and cook for 5-6 minutes.
- If you’re not using kokum, add buttermilk and stir to combine. Simmer for another minute on low heat and then turn off the gas.
- For the tempering, heat ghee in a small pan. Add cumin seeds and green chilies. Let them sizzle for about 10 seconds.
- Pour this tempering into the curry and mix well.
- Serve the Danyachi Amti hot, ideally paired with sabudana khichdi for fasting days.
