4 raw potatoes

2 haddock fillets
3 milk
2 butter

Instructions:

  1. Render Salt Pork: Begin by frying the salt pork in a heavy kettle until all the fat has been rendered. Once done, remove the rendered fat and set aside.

  2. Prepare Potatoes and Onions: Peel and dice the raw potatoes, and finely chop the onions. Add them to the kettle with the rendered fat. Season with 1/2 teaspoon of salt.

  3. Cook Potatoes and Onions: Cover the potatoes and onions with hot water and cook over medium heat, covered, for approximately 15 minutes, or until the potatoes are just tender. Be careful not to overcook.

  4. Prepare Haddock: While the potatoes and onions are cooking, cut the haddock fillets into large chunks and place them in another saucepan. Cover the fish with boiling water, adding 1 1/2 teaspoons of salt.

  5. Cook Fish: Cook the fish slowly over low heat, covered, until it is fork-tender, about 15 minutes. Once cooked, remove from heat and strain the liquid. Reserve the liquid and remove any bones from the fish.
