Ingredients

For the Tahu Telor:

  • 2 large eggs
  • 2 pieces of firm tofu (white tofu), cubed or crumbled
  • 1 handful of young green onions (daun bawang), finely chopped
  • 1 handful of bean sprouts (taoge), cleaned and trimmed

For the Peanut Sauce:

  • 1 handful of roasted peanuts
  • 2 cloves of fried garlic
  • 3 small red chilies (cabe rawit), adjust to taste
  • 1/2 teaspoon shrimp paste (terasi)
  • Soy sauce (kecap) to taste
  • Water as needed

For Garnishing:

  • Bean sprouts, blanched until slightly tender
  • Fried shallots (bawang goreng)
  • Additional green onions (optional)
  • Celery leaves (optional)

Instructions

  1. Prepare the Tahu Telor:

    • In a mixing bowl, crack the eggs and beat them well. Season with a pinch of salt and black pepper.
    • Add the crumbled or cubed tofu to the eggs. You may also cut the tofu into small cubes if preferred.
    • Incorporate the finely chopped green onions into the mixture.
    • Heat a non-stick pan over medium heat and lightly grease it. Pour the egg and tofu mixture into the pan, spreading it out evenly.
    • Cook the mixture until the egg is fully set and the tofu is lightly golden. Flip carefully if necessary to ensure even cooking on both sides. Once done, transfer it to a plate.
  2. Make the Peanut Sauce:

    • In a mortar and pestle or a food processor, grind the roasted peanuts along with the fried garlic, red chilies, and shrimp paste until smooth.
    • Gradually add a little water to the mixture to reach a slightly runny consistency. Continue to blend until the sauce is smooth and well combined.
    • Stir in soy sauce to taste. Adjust the seasoning as needed and add more soy sauce if you prefer a stronger flavor.
  3. Assemble and Serve:

    • Place a serving of steamed rice on a plate.
    • Cut the cooked tofu and egg mixture into portions and place them on top of the rice.
    • Generously drizzle the peanut sauce over the tofu and egg mixture.
    • Sprinkle with blanched bean sprouts and garnish with fried shallots. Optionally, you can also add additional green onions or celery leaves for extra freshness and crunch.
