Ingredients

  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 2 egg whites

  • 1 cup heavy whipping cream

Instructions

  1. In a small bowl, combine water and vanilla extract.

  3. Prepare a double boiler by bringing about 1 inch of water to a slight simmer.
  4. In a heatproof mixing bowl, combine egg whites, pure maple syrup, cream of tartar, and salt.
  5. Set the bowl over the simmering water, ensuring the bottom of the bowl doesn’t touch the water, and beat the mixture with an electric mixer on low speed.
  6. Continuously move the beaters around until an instant thermometer reads 140Β°F, which should take approximately 3 to 5 minutes.
  7. Increase the mixer speed to high and continue beating for an additional 3 minutes, until the mixture becomes fluffy and glossy.
  8. Remove the bowl from heat.
  9. Add the softened gelatin mixture to the bowl and continue to beat until the mixture has cooled to room temperature, approximately 4 to 5 minutes.
  10. In a separate chilled bowl, beat the heavy whipping cream with an electric mixer until firm peaks form.
  11. Gently fold the whipped cream into the meringue mixture using a rubber spatula until fully combined.
  12. Chill the frosting in the refrigerator before icing your cake with it.
