Ingredients
- 1 tablespoon water
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin
- 2 egg whites

- 1 cup heavy whipping cream
Instructions
- In a small bowl, combine water and vanilla extract.

- Continuously move the beaters around until an instant thermometer reads 140Β°F, which should take approximately 3 to 5 minutes.
- Increase the mixer speed to high and continue beating for an additional 3 minutes, until the mixture becomes fluffy and glossy.
- Remove the bowl from heat.
- Add the softened gelatin mixture to the bowl and continue to beat until the mixture has cooled to room temperature, approximately 4 to 5 minutes.
- In a separate chilled bowl, beat the heavy whipping cream with an electric mixer until firm peaks form.
- Gently fold the whipped cream into the meringue mixture using a rubber spatula until fully combined.
- Chill the frosting in the refrigerator before icing your cake with it.
