Fireworks Beans Recipe

Ingredients:

  • 4 slices bacon
  • 1/2 onion, finely chopped
  • 5 oz navy beans, drained and rinsed
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 1/2 tsp parsley flakes
  • 1 tsp mustard powder
  • 1/8 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • Salt and pepper, to taste

Instructions:

  1. Cook the Bacon:
    In a large saucepan over medium heat, cook the bacon until crispy. Remove the bacon from the pan and place it on a paper towel-lined plate to drain. Reserve about 2 tablespoons of bacon grease in the saucepan.

  2. Sauté the Onions:
    Add the chopped onions to the bacon grease in the saucepan. Sauté over medium heat until the onions are translucent and softened.

  3. Combine Ingredients:
    Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked bacon (crumbled), sautéed onions, navy beans, great northern beans, diced tomatoes, maple syrup, apple cider vinegar, soy sauce, parsley flakes, mustard powder, ginger, cinnamon, salt, and pepper. Mix everything thoroughly.

  4. Bake:
    Transfer the bean mixture into a baking dish. Bake in the preheated oven for 20 to 25 minutes, or until the beans are heated through, bubbly around the edges, and slightly browned on top.

  5. Serve:
    Remove from the oven and let it cool for a few minutes. Serve warm as a delicious side dish or a standalone meal.

Tips:

  • For a vegetarian version, omit the bacon and use olive oil to sauté the onions.
  • These beans can be prepared ahead of time and reheated before serving.
