Instructions:
- Preheat oven to 300°F (150°C).
- Prepare Pan: Lightly coat an 8″ square pan with cooking spray.
- Melt Chocolate: In the top of a double boiler over hot but not boiling water, melt the unsweetened chocolate and butter until smooth.
- Cool Chocolate Mixture: Allow the chocolate mixture to cool for 5 minutes.
- Mix Ingredients: In a bowl, mix 1 1/4 cups of sugar with the melted chocolate until well blended. Add 1/2 tsp of vanilla extract, then beat in the eggs one at a time until smooth. Stir in 3/4 cup of flour and beat until well combined. Set aside the chocolate mixture.
- Prepare Cream Cheese Mixture: In a food processor or with an electric mixer, blend the cream cheese, 1 1/2 tsp of flour, 5 tbsp of sugar, egg, and 1/4 tsp of vanilla extract until smooth.
- Layer Batter: Spread 2/3 of the brownie batter into the prepared pan. Cover it with the cream cheese mixture.
- Top with Remaining Batter: Scoop the remaining brownie mixture over the cream cheese mixture in nine evenly spaced mounds, leaving space between them.
- Create Marbled Effect: Use the handle of a wooden spoon to make parallel lines in the batter about 1 1/2″ apart in one direction, then repeat in the other direction. Be careful not to overmix; the effect should be marbled. Gently shake the pan to level the batter.
- Bake: Place the pan in the preheated oven and bake for 50 minutes, or until a toothpick inserted comes out clean or with moist crumbs.
- Add Toppings: Sprinkle the finely chopped semisweet chocolate evenly over the hot brownies. Wait for 5 minutes for the chocolate to melt, then spread it evenly over the top of the brownies.
- Alternative Topping: Instead of chopped chocolate, you can spread Nutella over the warm brownies.
- Cool: Allow the brownies to cool for at least one hour before cutting into bars.
