Instructions

  1. Cook the Rice and Peas
    Fill a large pot with water, add a generous pinch of fine salt, and bring it to a boil. Add the green peas to the boiling water. After a few minutes, add the Arborio rice to the same pot. Cook the rice 2–3 minutes less than the package instructions indicate, ensuring it retains a firm texture. Drain and let it cool to room temperature.

  2. Prepare the Vegetables
    While the rice cooks, wash the red and yellow bell peppers. Remove the stems, seeds, and inner membranes, then slice them into thin strips before cutting into small cubes. Place these in a large mixing bowl, which will serve as the base for your salad.

  3. Dice and Slice Other Ingredients
    Wash the ripe tomatoes thoroughly. Halve them and scoop out the seeds and pulp with a teaspoon. Dice the tomatoes into small chunks and add them to the bowl.
