Ingredients:

3/4 Methi vegetable
2 Red chili powder
1 Turmeric powder
1 Salt
5 – 7 Green chilies
2 – 3 Garlic cloves
8 – 10 Peanuts
4 – 5 Ginger
Gram flour
Wheat flour

Instructions:

For Parathas:

  1. Grind Red Chilli Powder and garlic together. 🌶️
    In a grinder, combine red chili powder and garlic cloves. Grind them into a fine paste. Set aside.

  2. Prepare the dough. 🍲
    In a mixing bowl, add methi leaves, gram flour, wheat flour, turmeric powder, salt, and the grinded paste from step 1. Mix all the ingredients well until they form a thick dough.

  3. Add oil to the dough. 🥣
    Incorporate 2-3 tablespoons of oil into the dough mixture. Knead until the oil is well incorporated.

  4. Shape the parathas. 🥟
    Take a portion of the dough and roll it into a ball. Flatten it into a disc shape using a rolling pin. Repeat with the remaining dough.

  5. Cook the parathas. 🍳
    Heat a skillet or tawa over medium heat. Place a rolled-out paratha on the skillet and cook until golden brown spots appear on both sides, flipping as needed. Repeat with the remaining dough balls.

For ‘Thecha’:

  1. Roast the green chilies. 🌶️
    Heat a frying pan and sprinkle some oil. Place the green chilies on the pan and roast them until they start to turn partially brown.

  2. Prepare the paste. 🥜
    In a grinder, combine the roasted green chilies, ginger, garlic, salt, and peanuts. Grind them into a coarse paste.

  3. Roast the paste. 🔥
    Pour 2-3 tablespoons of oil into the frying pan. Add the ground paste and roast it for 4-5 minutes, stirring continuously, until the raw smell disappears.
