Description:
These Diana’s Mexican Fila Rolls are perfect for feeding a crowd or saving leftovers for later meals. They’re a fantastic way to utilize leftover roast meats and make for an excellent meal during sports days or any gathering where you need a hearty dish.

Instructions:

Prepare the Filling:
- In a large bowl, mix together all the ingredients except for the phyllo dough, olive oil, and condiments until well combined.

Divide the Filling:
- Roughly divide the mixture into thirds while still in the bowl and set aside.

Prepare the Phyllo Dough:
- Divide the phyllo sheets into thirds.
- Pour olive oil into a bowl large enough to dip your hand in flat.

Assemble the Rolls:
- Take one phyllo sheet and lay it out on a clean counter, long side facing away from you.
- Overlap another sheet slightly, leaving about 2 1/2 inches on each side.
- Dip your hand in olive oil and make quick prints on the sheets.
- Repeat until you’ve used up one-third of the dough.
- Place one-third of the meat mixture in a log shape on the phyllo dough, leaving space at the edges.
- Roll and tuck in the sides tightly to form a log shape, ensuring the sides are well tucked in to prevent leaks.
- Repeat with the remaining dough and filling to make three logs.

Bake the Rolls:
- Preheat the oven to 350ยฐF (175ยฐC).
- Place the rolls seam side down on a baking sheet.
- Rub olive oil over the tops and sides of the logs.
- Using a sharp knife, make diagonal slices into the rolls, about 1 1/2 inches apart.
- Bake for 45 minutes to 1 hour, until the tops are golden brown.
- Let the rolls stand for 10 minutes before serving.
