Instructions:

  1. Prepare the Filling:

    • In a large bowl, mix together all the ingredients except for the phyllo dough, olive oil, and condiments until well combined.
  2. Divide the Filling:

    • Roughly divide the mixture into thirds while still in the bowl and set aside.
  3. Prepare the Phyllo Dough:

    • Divide the phyllo sheets into thirds.
    • Pour olive oil into a bowl large enough to dip your hand in flat.
  4. Assemble the Rolls:

    • Take one phyllo sheet and lay it out on a clean counter, long side facing away from you.
    • Overlap another sheet slightly, leaving about 2 1/2 inches on each side.
    • Dip your hand in olive oil and make quick prints on the sheets.
    • Repeat until you’ve used up one-third of the dough.
    • Place one-third of the meat mixture in a log shape on the phyllo dough, leaving space at the edges.
    • Roll and tuck in the sides tightly to form a log shape, ensuring the sides are well tucked in to prevent leaks.
    • Repeat with the remaining dough and filling to make three logs.
  5. Bake the Rolls:

    • Preheat the oven to 350ยฐF (175ยฐC).
    • Place the rolls seam side down on a baking sheet.
    • Rub olive oil over the tops and sides of the logs.
    • Using a sharp knife, make diagonal slices into the rolls, about 1 1/2 inches apart.
    • Bake for 45 minutes to 1 hour, until the tops are golden brown.
    • Let the rolls stand for 10 minutes before serving.
  6. Serve:

    • Place a small amount of shredded lettuce on a large plate.
    • Top with a thick slice of the Fila Roll.
    • Add your choice of condiments.
    • Serve with refried beans and cold beer.

These Fila Rolls are perfect for freezing. Simply bake as directed, then freeze the extra rolls for later meals. To reheat, simply microwave until heated through.
