Instructions

  1. Prepare the Ganache
    Begin by making the ganache. Pour the fresh cream into a saucepan and heat it over medium heat. Once it is warm, finely chop the white chocolate into small pieces. When the cream is hot (but not boiling), pour one-third of the cream onto the chopped chocolate. Stir gently to help the chocolate melt. Gradually add the remaining cream in two more portions, stirring continuously until the mixture becomes smooth.

  2. Add Butter
    Once the ganache is smooth, add the butter (cut into small cubes) at room temperature. Stir until fully incorporated, ensuring the ganache is silky and glossy.

  3. Assemble the Monster Sticks
    Transfer the ganache into a piping bag for easy application.
    Lay half of the Pavesini biscuits (the chocolate-flavored ones) flat on a tray. Pipe approximately 15g of ganache onto each biscuit using the piping bag.

  4. Create the Monster Sticks
    Close each sandwich with another Pavesini biscuit, pressing lightly to secure the ganache.
    Insert a wooden stick into the side of each biscuit stack, ensuring it goes into one of the two edges.

  5. Decorate
    To form the monsterโ€™s “teeth,” carefully place chocolate sprinkles along one side of the biscuits. Begin creating a “mouth” by decorating the top part of the biscuit in two central spots with a little extra ganache. Then, attach the sugar eyes to these points, allowing them to stick on their own.

  6. Chill and Serve
    Place the assembled monster sticks in the refrigerator for at least 30 minutes to set. Once chilled, they are ready to serve, delighting both kids and adults with their sweet and playful design!
