Egg Rolls with Moringa Leaves Recipe

Egg Rolls with Moringa Leaves is a nourishing omelette packed with the health benefits of moringa, also known as drumstick leaves. The addition of cheese gives this dish a soft, delicious texture that complements the unique taste of moringa, making it a delightful and wholesome choice for a side dish or breakfast.

Ingredients:

  • 4 Whole Eggs
  • 1 tablespoon All Purpose Flour (Maida)
  • Salt, to taste
  • Black pepper powder, to taste
  • 2 Green Chillies, finely chopped
  • 1/4 cup Cheddar cheese, grated
  • 1 cup Drumstick Leaves (Moringa/Murungai Keerai), finely chopped
  • Butter (Salted) or oil, for cooking

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a rectangular baking pan (13 x 9 inches) with butter.

  2. Heat a teaspoon of oil in a small wok or kadai. Add the finely chopped drumstick leaves, sprinkle salt, and sauté until the leaves wilt down and excess moisture evaporates. Turn off the heat and allow the moringa leaves to cool.

  3. In a bowl, whisk the eggs together with flour, salt, black pepper, and green chillies. Pour the egg mixture into the prepared baking pan, spreading it evenly.

  4. Evenly sprinkle the cooked moringa leaves over the egg mixture. Then, sprinkle grated cheddar cheese on top.

  5. Cover the pan with aluminum foil and bake in the preheated oven for about 15 minutes, or until the eggs are set.

  6. Once the eggs are set, remove the pan from the oven and allow it to cool slightly. Loosen the egg mixture from the sides of the pan, then carefully roll it up in a jelly-roll fashion.

  7. Slice the egg rolls into portions and serve with a glass of refreshing Banana and Mango Smoothie and toast for a perfect breakfast.
