Sausage and Mozzarella Omelet

Ingredients:

  • 4 large eggs
  • 1 large sausage, thinly sliced
  • 2 scallions, thinly sliced
  • Salt, to taste
  • Pepper, to taste
  • Sugar, to taste
  • Grated mozzarella cheese, as needed
  • Margarine, for greasing

Instructions:

  1. Prepare the Egg Mixture: In a bowl, whisk together the eggs, sliced scallions, sausage, salt, pepper, and sugar until well combined.

  2. Heat the Pan: Heat a non-stick skillet over low heat and grease it lightly with margarine.

  3. Cook the Omelet: Pour the egg mixture into the skillet, spreading it evenly. Cover the skillet with a lid and cook over low heat until the edges begin to set.

  4. Add Cheese: Once the omelet is partially set, sprinkle a generous amount of grated mozzarella cheese over the top. Cover the skillet again and continue to cook until the omelet is fully cooked through and the cheese has melted.

  5. Serve: Carefully slide the omelet onto a plate and cut into wedges. Serve hot.
