Cabbage Kofta Curry Recipe – No Onion No Garlic

Ingredients:
For Kofta Balls:
- 2 cups cabbage, grated
- 1/2 cup chickpea flour (besan)
- 1 green chili, chopped
- 2 tbsp fresh coriander, chopped
- 1/2 tsp cumin powder
- 1/2 tsp red chili powder
- A pinch of turmeric powder
- 1/2 tsp garam masala powder
- 1/2 tsp salt (to taste)
- 1 cup oil (for frying)
For Curry:
- 3 tomatoes, pureed
- 1 tbsp ginger paste
- 3-4 tbsp fresh cream
- 1/2 cup chickpea flour (besan)
- 2 tbsp yogurt
- 1 1/2 tbsp coriander powder
- 1 tbsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala powder
- 1-2 bay leaves
- 1/2 tsp crushed cardamom
- Salt (to taste)
- Oil (for cooking)
- 1 sprig fresh coriander, chopped

Instructions:

Prepare the Kofta Balls:
- Grate the cabbage and place it in a bowl. Press the cabbage to remove excess water.
- Add chickpea flour, green chili, coriander, cumin powder, turmeric powder, garam masala, red chili powder, and salt to the cabbage. Mix well.
- Shape this mixture into small balls (koftas) and set them aside.
- Heat oil in a pan. Once hot, fry the koftas until they turn golden brown. Remove and keep aside.

Make the Curry:
- Heat oil in a separate pan. Add bay leaves and ginger paste, sauté for about 10 seconds.
- Add chickpea flour and roast it for 20 seconds.
- Add the pureed tomatoes and cook for 1 minute. Then, add coriander powder, red chili powder, turmeric powder, cumin powder, and garam masala. Cook for 4-5 minutes.
- Add yogurt and cook for an additional minute.
- Pour in fresh cream and stir well. Let it simmer for 3 minutes.
- Add water and salt, and bring it to a boil. After 5 minutes, add crushed cardamom and let it simmer for another 5 minutes.

Final Steps:
- Add the fried koftas to the curry and cook for 1 more minute.
- Garnish with fresh coriander.
Serve the Cabbage Kofta Curry with boondi raita and chapati or rice for a wholesome dinner.
