Diet: High-Protein Vegetarian

Ingredients

Ingredient Quantity
Dates (soaked in warm water for 10 minutes) 1 cup
Cocoa Powder 1/4 cup
Almond Meal (Badam Powder) 1/2 cup
Flax Seed Powder (Flax Meal) 1/4 cup
Vanilla Extract 1 teaspoon
Multigrain Digestive Oat Biscuits 4 biscuits, broken
Dark Chocolate (chopped) 1/2 cup
Dessicated Coconut 1/2 cup

Preparation Time: 20 minutes

Cooking Time: 0 minutes

Yield: 12-15 truffles

Instructions:

  1. Prepare the Ingredients:
Begin by preparing all the ingredients to ensure the process goes smoothly. Soak the dates in warm water for about 10 minutes to soften them. Once done, drain the water and set the dates aside.

  2. Blend the Mixture:
In a food processor, combine the soaked dates, almond meal (badam powder), flax seed powder, cocoa powder, NutriChoice Oats Almond & Milk biscuits, and vanilla extract. Pulse the mixture until everything is well blended and the mixture begins to come together in a dough-like consistency.

  3. Add Chocolate:
Next, add the chopped dark chocolate to the mixture and pulse again to incorporate the chocolate evenly throughout.

  4. Form the Truffles:
Grease your fingers lightly with some oil or butter to prevent the mixture from sticking. Take small portions of the blended mixture and roll them into bite-sized balls.

  5. Coat in Coconut:
Roll each truffle in the dessicated coconut to give it a lovely texture and added flavor.

  6. Chill and Serve:
Place the truffles on a tray lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up. These truffles can be stored in the refrigerator for 2 to 3 weeks.

Enjoy!
