Ayam Goreng ala RM Padang

Ingredients:

  • 1 kg chicken, cut into pieces and cleaned
  • 400 ml water
  • Ground Spice Mix:
    • 8 shallots
    • 4 garlic cloves
    • 4 candlenuts
    • 2 teaspoons coriander seeds
    • 2 cm ginger
    • 1 teaspoon turmeric powder
    • 1 stalk lemongrass
    • 75 grams galangal
    • 1 teaspoon tamarind water
    • 1 teaspoon sugar
    • 1 teaspoon salt

Instructions:

  1. Prepare the Spice Mix and Chicken:

    • Begin by combining the ground spice mix with the chicken pieces and water. Ensure the chicken is well-coated with the spice mixture.
  2. Cook the Chicken:

    • Place the chicken mixture in a pot and cook over medium heat until the chicken is fully cooked and the water has been absorbed. This process will infuse the chicken with the flavors of the spices.
  3. Fry the Chicken:

    • Once the chicken is cooked and the liquid is absorbed, remove the chicken from the pot and set it aside.
    • Heat oil in a pan and fry the chicken pieces until they turn golden brown and crispy.
