Badam Nu Gosht Recipe – Parsi Style Mutton in Almond Gravy

Description:
Badam Nu Gosht is a rich and flavorful Parsi dish made with mutton cooked along with whole spices, and then simmered in a creamy almond-based gravy. The dish is elevated with a blend of onions, tomatoes, ginger, garlic, and an assortment of spices that bring out the full depth of flavor. Ingredients:

  • 300 grams Mutton (on the bone)
  • 2 Bay leaves (tej patta)
  • Salt, to taste
  • 2 Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 1 cup Milk
  • 1 tablespoon Ghee
    For the Badam Gravy Masala:
  • 1/3 cup Whole Almonds (Badam)
  • 1 inch Ginger
  • 5 cloves Garlic
  • 4 Dry Red Chillies
  • 1 inch Cinnamon Stick (Dalchini)
  • 5 Black Peppercorns
  • 2 Cloves (Laung)

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Make the Badam Gravy Masala:
    Start by preparing the almond gravy masala. In a blender, combine the whole almonds, ginger, garlic, dry red chillies, cinnamon stick, black peppercorns, and cloves. Add a little water if needed, and blend into a smooth paste. Set it aside.

  2. Cook the Mutton:
    In a heavy-bottomed pan, heat 1 tablespoon of ghee. Add the bay leaves and sauté them for a few seconds until fragrant. Add the chopped onions and sauté until they turn golden brown. Next, add the tomatoes and cook until they soften.

  3. Add the Mutton:
    Add the mutton pieces to the pan and cook until they are browned on all sides.

  4. Simmer the Gravy:
    Add the prepared almond masala to the pan with the mutton. Stir well to coat the meat with the spice paste. Add milk and salt to taste. Let the mixture simmer for about 15-20 minutes until the mutton is cooked through and tender, and the gravy thickens.

  5. Serve:
    Once the mutton is cooked and the gravy has reached a rich consistency, remove from heat. Serve the Badam Nu Gosht hot with steamed rice or flatbreads.
