Passion Fruit Shrikhand Shots Recipe

Ingredients:

Curd (Dahi / Yogurt) 1 cup
Passion fruit (pulp) 2 fruits (pulp required)
Caster Sugar 1 tablespoon
Cardamom Powder (Elaichi) 1/4 teaspoon
Saffron strands (soaked in warm milk) 1 pinch
Chocolate Chips 1-2 tablespoons

Instructions:

Step 1: Prepare the Curd

  • Begin by setting up a strainer over a bowl, and place a thin muslin cloth on top of it.
  • Pour the curd (yogurt) into the muslin cloth, gather the edges, and tie them securely.
  • Let the curd strain in the refrigerator for at least 3 to 4 hours, allowing excess water to drain and the curd to thicken.

Step 2: Extract Passion Fruit Pulp

  • While the curd is straining, cut the passion fruits in half and scoop out the pulp using a spoon.
  • Set aside one fruit’s pulp for mixing with the curd and keep the other aside for assembling the shrikhand shots later.

Step 3: Whisk the Curd

  • After 3 to 4 hours, check the curd. It should be thick and all excess water (whey) will have drained into the bowl beneath.
  • Carefully squeeze out any remaining liquid and transfer the thickened curd into a wide bowl.
  • Using a hand beater, whisk the curd until it becomes smooth and creamy.

Step 4: Flavor the Curd

  • To the whisked curd, add the caster sugar, cardamom powder, saffron mixed with warm milk, and the passion fruit pulp from one of the fruits.
  • Whisk the mixture thoroughly until all the ingredients are well incorporated.

Step 5: Assemble the Shrikhand Shots

  • Take 4 shot glasses and place about 1 teaspoon of passion fruit pulp in each glass, layering the bottom with the fresh, tangy fruit flavor.
  • Next, spoon the prepared shrikhand into each glass, filling them to the top.
  • Finish with a sprinkle of chocolate chips on top of each shot for a delightful crunch and sweetness.

Step 6: Chill and Serve

  • Place the shot glasses in the refrigerator and allow them to chill for at least 30 minutes.
  • If desired, you can garnish the shots with chopped nuts for added texture and flavor.
