Passover Garlic Bread
Sometimes, it feels like the need for bread is inescapable, even during Passover, when traditional bread is off-limits. This Passover Garlic Bread is a delightful adaptation of a recipe by Phyllis Glazer, providing a flavorful bread experience that’s both satisfying and perfectly kosher for the holiday. With its rich garlic flavor and crispy exterior, this bread is sure to be a hit at your Passover table. The preparation is straightforward, and the end result is a delicious, aromatic loaf that will make any meal feel complete. Here’s how to make it:
Ingredients:
- ½ cup olive oil
- 2 tablespoons water
- 1 cup matzo meal
- 1 teaspoon salt
- 1 tablespoon fresh basil, chopped
- 1 large egg
- 4 cloves garlic
- 2 additional tablespoons olive oil (for the garlic spread)
Instructions:
-
Prepare the Mixture:
Begin by heating ½ cup of olive oil and 2 tablespoons of water in a small saucepan over medium heat. Bring the mixture to a boil, then remove the pan from the heat. Stir in 1 cup of matzo meal, 1 teaspoon of salt, and 1 tablespoon of freshly chopped basil. Mix well until all ingredients are thoroughly combined. -
Blend the Dough:
Preheat your oven to 375°F (190°C). Transfer the matzo meal mixture and 1 large egg into the bowl of a food processor fitted with a metal blade. Pulse several times to blend the ingredients. While the processor is running, drop 1 clove of garlic through the feed tube. Continue processing until the mixture starts to form a cohesive ball around the metal blade. -
Shape the Loaf:
Remove the dough from the food processor. Lightly coat your hands with matzo cake meal to prevent sticking, then shape the dough into an oval loaf. Place the shaped loaf onto an ungreased cookie sheet. -
Bake the Bread:
Bake in the preheated oven for 40-50 minutes, or until the top of the loaf is golden brown. Once baked, remove the loaf from the cookie sheet and let it cool on a wire rack for 10 minutes. -
Prepare the Garlic Spread:
While the bread is cooling, split the loaf in half horizontally. Preheat the broiler. Mince the remaining 3 cloves of garlic and mix them with 2 tablespoons of olive oil. Spread this garlic-oil mixture evenly over the cut sides of each half loaf. -
Toast the Bread:
Place the loaves under the broiler and toast until the garlic spread becomes just slightly golden. Keep a close eye on the bread to avoid burning. -
Serve:
After toasting, cut the bread into slices and serve immediately while still warm.
Notes:
- If you’re not using a food processor, you can finely chop the garlic and mix it into the matzo meal mixture using a fork or electric mixer.
- To achieve the perfect consistency, ensure the dough forms a smooth ball during processing. If it feels too sticky, add a bit more matzo meal; if too dry, a splash of water can help.
This Passover Garlic Bread is not just a tasty alternative to regular bread but also a wonderful way to add a touch of tradition and flavor to your holiday meal. Enjoy this crispy, aromatic loaf with your favorite Passover dishes and share it with family and friends for a memorable feast. 🌿🍞🧄
