Instructions:

  1. Prepare the Dough:

    • In a large bowl, combine 2 cups of flour, yeast, salt, and 1/2 teaspoon of ginger. Stir well and set aside.
    • In a medium saucepan, combine skim milk, water, dark brown sugar, unsalted butter, and the remaining 1/4 teaspoon of ginger. Cook over medium heat until the mixture is very warm but not scalded. Remove from heat.
    • Gradually add the milk mixture to the flour mixture, beating at medium speed for 3 minutes.
    • Add the egg and continue beating for an additional 3 minutes.
    • Gradually add enough of the remaining flour to make a soft dough. Turn the dough out onto a lightly floured work surface.
  2. Knead and Rise:

    • Knead the dough until it is smooth and elastic, adding up to 2 tablespoons of flour as necessary.
    • Place the dough in a large oiled bowl, turning it once to coat. Cover and let it rise in a warm, draft-free place until doubled in bulk, about 1 1/2 hours.
    • After rising, punch the dough down and let it rest for 10 minutes.
  3. Assemble the Coffee Cake:

    • Place the dough on a lightly floured work surface and roll it into a 22×12-inch rectangle. Add more flour if needed to prevent sticking.
    • Combine the jam with the remaining 1/4 teaspoon of ginger. Spread the jam mixture evenly over the rectangle, leaving about 1 inch of margin around the sides.
    • If desired, sprinkle nuts over the jam.
  4. Shape and Bake:

    • Roll up the dough jellyroll style, starting from the long side. Pinch down the ends and seams to seal.
    • Place the rolled dough seam side down in a 9-inch round cake pan coated with cooking spray, starting from the outer edges and spiraling into the center of the pan.
    • Cover the pan and let the dough rise until doubled in bulk again, about 30 minutes.
    • Preheat the oven to 350Β°F (175Β°C). Bake the coffee cake for 35 minutes or until golden brown.
    • If the top of the cake is browning too quickly, cover it with foil for the last 15 minutes of baking to prevent excessive browning.
    • Once baked, cool the coffee cake in the pan for 10 minutes, then remove it from the pan and cool it further on a wire rack.
