Ingredients

Ingredient Quantity
Prawns (peeled and deveined) 50 grams
Green Moong Sprouts (boiled and mashed) 1 Cup
Celery (chopped into small cubes) 3 stalks
Mint Leaves (Pudina) 8 leaves
Tomato (diced) 1 medium-sized
Vegetable stock 3 cups (or more as needed)
Onion (sliced) 1 medium-sized
Bay leaves (Tej Patta) 1 leaf
Whole Black Peppercorns 2 whole
Cloves (Laung) 2 whole
Ginger (grated) 1 teaspoon
Garlic (grated) 1 teaspoon
Oil 1 tablespoon (or as required)
Black Pepper Powder 1 teaspoon
Corn flour 1 tablespoon (dissolved in 1 tablespoon of water)
Red Chilli flakes (optional) 1 teaspoon

Preparation Time: 48 hours (for sprouting green grams)

Cooking Time: 20 minutes

Total Time: 48 hours, 20 minutes

Instructions:

  1. Sprouting the Green Grams:
Begin by soaking the green grams in water overnight. After soaking, tie them in a thin muslin cloth and place them in a warm, dry place for about 48 hours. In this time, the green grams will sprout, ready to be cooked. Once sprouted, rinse them well and remove any peels. Boil the sprouted green grams until soft; you can use a pressure cooker for a quicker result (1 whistle), or cook them in a saucepan for about 35-40 minutes. After boiling, mash them using a spoon or fork until they form a coarse paste. It doesn’t need to be completely smooth.

  2. Preparing the Soup Base:
In a saucepan, heat the oil on medium heat. Add the bay leaves, whole black peppercorns, and cloves. Sauté for a few seconds to release their aroma. Add the grated ginger and garlic and sauté on low heat until the raw smell disappears. Then, add the sliced onion and cook until golden brown. Once the onions are caramelized, add the diced tomato and cook for another 5 minutes until the tomatoes soften.

  3. Blending the Soup Base:
Once the tomatoes have softened, transfer the mixture to a blender. Add the chopped celery and mint leaves. Blend the mixture to a smooth consistency, adding a little water if necessary. Set the blended mixture aside.

  4. Cooking the Prawns:
In the same saucepan, heat 1 tablespoon of oil over medium heat. Add the prawns and sauté for a few seconds. Season with black pepper powder and red chili flakes, if using. Sauté the prawns until they turn pink and are just cooked through.

  5. Combining Everything:
Add the vegetable stock to the saucepan with the prawns. Bring it to a gentle boil and cook for about 10 minutes with the lid on. Once the prawns are cooked, remove the lid and add the mashed green grams and the blended vegetable mixture. Stir everything well to combine.

  6. Thickening the Soup:
Season with salt to taste and let the soup come to a full boil. If you prefer a thicker soup, add the dissolved corn flour and mix thoroughly. Reduce the heat and simmer for 5 minutes, allowing the flavors to meld together.

  7. Final Touches:
Remove the soup from the heat and transfer it to a serving bowl. Garnish with fresh mint leaves and a light sprinkle of black pepper powder.
