Practical Chicken Porridge

Ingredients

  • 400 grams chicken
  • 1 bowl of rice
  • 1-2 ears of corn (adjust to taste)
  • 100 grams carrots
  • 100 grams peanuts
  • 2 eggs
  • 1 stalk lemongrass
  • Celery leaves (to taste)
  • Salt (to taste)
  • Seasoning (to taste)

Instructions

  1. Prepare the Chicken: Begin by boiling the chicken. The broth from this will be used to make the porridge, so add a little salt and seasoning to the water. Once the chicken is cooked, remove it from the broth and set it aside.
  2. Cook the Rice: Add the rice to the chicken broth. If there isn’t enough broth, add some water to achieve the desired consistency. The thickness of the porridge can be adjusted according to your preference.
  3. Add Corn and Vegetables: Cut the corn kernels off the cob and add them to the porridge. Cook until the corn is fully cooked. Then, add the lemongrass (bruised) and diced carrots.
  4. Prepare the Toppings: While the porridge is cooking, prepare the additional ingredients. Boil the eggs and cut them into pieces. Fry the peanuts until golden brown. Take the previously boiled chicken, fry it, and shred it into small pieces. Finally, chop the celery leaves.
  5. Season and Serve: Taste the porridge to check for seasoning, adding more salt or seasoning if necessary. When ready to serve, ladle the porridge into bowls and top with shredded chicken, fried peanuts, boiled eggs, and chopped celery. If you enjoy fried shallots, you can sprinkle some on top for added flavor.
