Black Urad Dal (Whole) 1/4 cup
Arhar dal (Split Toor Dal) 1 tablespoon
Chana dal (Bengal Gram Dal) 1 tablespoon
Methi Seeds (Fenugreek Seeds) 1/2 teaspoon

Instructions:

  1. Roast the Grains & Lentils:
    • Begin by dry roasting the rice flour, semolina (sooji), and sooji rice in a pan. Roast them separately until they turn golden brown. This enhances the texture and flavor. Once done, remove from heat and set them aside to cool.
  2. Roast the Lentils and Fenugreek Seeds:
    • In the same pan, dry roast the white urad dal (split), black urad dal (whole), arhar dal (split toor dal), chana dal (bengal gram dal), and methi seeds (fenugreek seeds). Roast them until they become light brown and release a fragrant aroma. Keep them aside to cool as well.
  3. Grind the Ingredients:
    • Once all the roasted ingredients have cooled, transfer the lentils and poha (flattened rice) into a blender. Grind these ingredients into a smooth powder.
  4. Mix Everything Together:
    • Combine the smooth powder mixture with the previously roasted rice flour and semolina mixture. Stir well to ensure an even blend. Once mixed, pack the Instant Dosa Mix Powder into an airtight jar and store it for future use.
