Ingredients:
For the Pitor (Dumplings)

  • 1 ½ cups gram flour (besan)
  • ½ cup curd (beaten)
  • 2 ½ cups water
  • 1 tsp ginger (grated)
  • ½ tsp turmeric powder
  • Salt to taste
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • ¾ tsp crushed green cardamom seeds
  • A pinch of asafoetida
  • Oil, for frying

For the Curry

  • 1 tsp cumin seeds
  • 2 dried red chilies
  • 200 grams curd (beaten)
  • ½ tsp chopped green chilies
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • Salt to taste

Cooking Time: 90 minutes

Instructions:

  1. Make the Pitor (Chickpea Dumplings):

    • In a large bowl, combine the gram flour, curd, water, ginger, and green chilies. Mix well to form a smooth batter.
    • Heat oil in a pan and add cumin seeds. Let them crackle, then add asafoetida and mix.
    • Pour in the gram flour mixture and stir constantly to avoid lumps. Continue cooking until the mixture thickens, then remove from heat.
    • Grease a plate with oil or ghee and spread the gram flour mixture on it. Let it cool and set for about 1 hour. Once cooled, cut the mixture into square pieces.
  2. Fry the Pitor:

    • Heat oil in a pan and add the pitor pieces. Fry them until golden brown and crispy, then set aside.
  3. Make the Curry:

    • In a bowl, whisk together the curd, red chili powder, turmeric powder, and coriander powder.
    • Heat oil in a pan, add cumin seeds and let them crackle. Then add dried red chilies and sauté for 10 seconds.
    • Add chopped green chilies and cook for another 10 seconds.
    • Lower the heat and pour in the curd mixture. Stir constantly and cook for 3-4 minutes.
    • Add water to the pan and bring to a boil. Season with salt, and cook for another 15 minutes.
    • Add the fried pitor to the curry and let it simmer for an additional 3-4 minutes. Turn off the heat.
  4. Serve:

    • Serve the Pitor Ki Sabzi hot with Burani Raita and phulkas for a delicious Rajasthani meal.
