Ingredients:
For the Pitor (Dumplings)
- 1 ½ cups gram flour (besan)
- ½ cup curd (beaten)
- 2 ½ cups water
- 1 tsp ginger (grated)
- ½ tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- 1 tsp cumin seeds
- ¾ tsp crushed green cardamom seeds
- A pinch of asafoetida
- Oil, for frying
For the Curry
- 1 tsp cumin seeds
- 2 dried red chilies
- 200 grams curd (beaten)
- ½ tsp chopped green chilies
- 1 tsp red chili powder
- ½ tsp turmeric powder
- Salt to taste

Make the Pitor (Chickpea Dumplings):
- In a large bowl, combine the gram flour, curd, water, ginger, and green chilies. Mix well to form a smooth batter.
- Heat oil in a pan and add cumin seeds. Let them crackle, then add asafoetida and mix.
- Pour in the gram flour mixture and stir constantly to avoid lumps. Continue cooking until the mixture thickens, then remove from heat.
- Grease a plate with oil or ghee and spread the gram flour mixture on it. Let it cool and set for about 1 hour. Once cooled, cut the mixture into square pieces.

Fry the Pitor:
- Heat oil in a pan and add the pitor pieces. Fry them until golden brown and crispy, then set aside.

Make the Curry:
- In a bowl, whisk together the curd, red chili powder, turmeric powder, and coriander powder.
- Heat oil in a pan, add cumin seeds and let them crackle. Then add dried red chilies and sauté for 10 seconds.
- Add chopped green chilies and cook for another 10 seconds.
- Lower the heat and pour in the curd mixture. Stir constantly and cook for 3-4 minutes.
- Add water to the pan and bring to a boil. Season with salt, and cook for another 15 minutes.
- Add the fried pitor to the curry and let it simmer for an additional 3-4 minutes. Turn off the heat.

- Serve the Pitor Ki Sabzi hot with Burani Raita and phulkas for a delicious Rajasthani meal.
