A refreshing and deliciously raw dessert that is perfect for those who want to indulge in something light and healthy without compromising on flavor. This raw strawberry tart features a crunchy almond-coconut base topped with a creamy, fresh strawberry filling and decorated with delicate edible flowers and crunchy almonds. Ideal for a special occasion or a guilt-free treat any time of the year!

Ingredients:

Ingredient Quantity
Blanched almonds 120g
Shredded coconut 40g
Dates (pitted) 180g
Salted almond butter 130g
Fresh strawberries 250g
Wild strawberries (Fragoline di bosco) 70g
Cashews 80g
Coconut oil 90g
Unrefined cane sugar 40g
Additional fresh strawberries (for garnish) q.b.
Wild strawberries (for garnish) q.b.
Edible flowers (for decoration) q.b.
Whole almonds (for garnish) q.b.

Instructions:

1. Prepare the Base:

  • Start by soaking the cashews in water overnight to remove any excess oils and make them easier to digest. This step helps to soften them for a smoother texture.
  • Once the cashews are ready, place the blanched almonds, pitted dates, shredded coconut, and salted almond butter in a food processor or blender. Process until you achieve a crumbly, malleable mixture that can easily stick together.
  • Line the bottom of a 22 cm (8.6-inch) tart pan with this mixture, pressing it down firmly using the back of a spoon. Make sure the base is evenly distributed and compacted.
  • Place the pan in the fridge for about 30 minutes to allow the crust to firm up.

2. Prepare the Strawberry Cream Filling:

  • While the crust is setting, move on to the creamy filling. Add the cleaned fresh strawberries, wild strawberries, and melted coconut oil (you can melt it either in a small pot over low heat or in the microwave) into your blender or food processor.
  • Blend the ingredients until you have a smooth and creamy mixture.
  • Once the crust is firm, pour this luscious strawberry cream over the base, smoothing it evenly with a spatula.

3. Assemble and Decorate:

  • Let the tart chill in the fridge until it firms up, ideally for a few hours, to help the flavors meld and set.
  • Once ready to serve, prepare the garnishes. Clean the remaining strawberries and slice them thinly.
  • Add the sliced strawberries, wild strawberries, and halved whole almonds to the top of the tart in a decorative pattern.
  • For an extra touch of elegance, scatter some edible flowers over the tart, such as dried rose petals, to give it a beautiful, natural look.

4. Serve and Enjoy:

  • Once everything is assembled and chilled, your raw strawberry tart is ready to be served. Enjoy it as a light dessert after a meal, or simply as a refreshing treat any time of day. The combination of sweet strawberries, crunchy almonds, and creamy filling is sure to impress!

Tips:

  • You can replace the coconut oil with another oil like avocado or olive oil, depending on your preference.
  • Make sure to let the tart chill for at least a couple of hours to allow the flavors to deepen and the tart to set properly.

This raw strawberry tart is not only an indulgent treat but also a healthy option that embraces the natural sweetness of fruit and the wholesome goodness of nuts. Whether you are following a raw food diet or simply looking for a dessert that’s fresh and clean, this tart is sure to become a favorite in your dessert repertoire!
