- In a saucepan, cover all the potatoes with cold water and bring to a boil.
- Simmer until the potatoes are tender but still slightly firm when pierced with a knife.
- Remove all but 4 potatoes from the saucepan and continue cooking these 4 until they are soft.

- Once cooled, cut the tops off the group of 24 potatoes.
- Scoop out the flesh using a melon baller, leaving a 1/4″ thick wall.
- Place the potato pulp in a double boiler or metal bowl over simmering water to keep warm.
- Peel and add the remaining 4 potatoes to the pulp.

- Cut a small slice off the bottom of each potato so they can stand upright on a baking sheet.
- Preheat the oven to 375°F (190°C).

- Heat the milk and melt the butter in a small saucepan.

- Stir the milk into the potatoes gradually until creamy.
