Instructions:

  1. Prepare Potatoes:

    • In a saucepan, cover all the potatoes with cold water and bring to a boil.
    • Simmer until the potatoes are tender but still slightly firm when pierced with a knife.
    • Remove all but 4 potatoes from the saucepan and continue cooking these 4 until they are soft.
  2. Prepare Potato Shells:

    • Once cooled, cut the tops off the group of 24 potatoes.
    • Scoop out the flesh using a melon baller, leaving a 1/4″ thick wall.
    • Place the potato pulp in a double boiler or metal bowl over simmering water to keep warm.
    • Peel and add the remaining 4 potatoes to the pulp.
  3. Preheat Oven:

    • Cut a small slice off the bottom of each potato so they can stand upright on a baking sheet.
    • Preheat the oven to 375°F (190°C).
  4. Prepare Mashed Potatoes:

    • Heat the milk and melt the butter in a small saucepan.
    • Push the potato flesh through a ricer, food mill, or wide-meshed sieve.
    • Stir the milk into the potatoes gradually until creamy.
    • Add creme fraiche, salt, pepper, and 1 tablespoon of chives. Mix well.
  5. Fill Potato Shells:

    • Pipe the mashed potatoes into the potato shells, ensuring the cut edges are covered.
  6. Bake:
