Cold Lettuce Rolls with Beef and Vegetables

Ingredients

Beef (carpaccio) 200g

Soy milk 50ml

Instructions

For the Beef Lettuce Rolls

  1. Begin by carefully separating the romaine lettuce leaves. Cut the leaves in half to create two large pieces per leaf.
  2. Lay two slices of beef carpaccio on each half of the lettuce leaves.
  3. Drizzle a little extra virgin olive oil over the beef slices and season with salt and pepper. For an extra flavor kick, spread a thin layer of mustard on the beef.
  4. Gently roll up each lettuce leaf, ensuring the seam is facing down so that the rolls stay intact and do not unravel.
  5. Once all the rolls are made, place them in the fridge to chill before serving.

For the Vegetable Lettuce Rolls

  1. Peel the carrot and chop it into small cubes. Rinse the peas well and set them aside.
  2. In a separate pot, boil an egg until fully cooked. Boil the potato as well, then peel and cube it once cooked.
  3. Prepare a “fake mayonnaise” by combining soy milk, sunflower oil, and vinegar in a blender. Blend for a few seconds until smooth. Season with a pinch of salt.
  4. In a large bowl, combine the cubed potato, peas, diced carrot, and chopped egg. Pour the mayonnaise dressing over the vegetables and mix well, adjusting the seasoning with more salt and pepper if needed.
  5. Wash and dry the remaining romaine lettuce leaves. Use a knife to remove the tough central stem. Cut the leaves in half and stack them.
  6. Spoon a tablespoon of the vegetable mixture onto each half of the lettuce leaves.
  7. Fold in the sides of the lettuce leaf towards the center and roll it up. Secure each roll with a sprig of chives.
  8. Place the prepared rolls in the fridge to chill until ready to serve.
